Hints & tips
- In a bain-marie the custard will thicken during service, add a little milk if required.
- For a set custard on trifles, use a little less water.

Custard mix: 114g; Boiling water: 568ml; To make: 660ml;
Custard mix: 200g; Boiling water: 1 litre; To make: 1.16 litres;
Custard mix: 1 kg; Boiling water: 5 litres; To make: 5.8 litres;
Overall pack yield = 18kg (17. 4 litres)
Water must be boiling hot for custard to thicken
1. Weigh out required amount of custard mix as per table above and place into a large enough bowl.
2. Pour boiling water onto the custard mix and whisk until smooth and creamy, ensuring all the powder is mixed in.
For best results, leave for a minute to thicken before serving.
Keep bag tightly closed after part use. |
